Ingredients (1 serving)
• ½ cup cooked quinoa
• 1 cup mixed vegetables (spinach, cucumber, carrots or roasted vegetables)
• 1 scoop PBMaxPro Peanut Protein
• 1 tbsp olive oil
• Juice of ½ lemon
• Pinch of salt and black pepper
Optional toppings:
• avocado slices
• roasted chickpeas
• sesame seeds
Method
- Prepare the base
Place the cooked quinoa in a bowl and add the vegetables. - Make the protein dressing
In a small bowl mix PBMaxPro protein with olive oil, lemon juice, salt and pepper. Add 1–2 tablespoons of water and stir until smooth. - Assemble the bowl
Drizzle the dressing over the quinoa and vegetables and mix gently. - Add toppings
Finish with avocado, chickpeas or sesame seeds for extra flavour and texture.
