Ingredients (1 serving)

• ½ cup cooked quinoa
• 1 cup mixed vegetables (spinach, cucumber, carrots or roasted vegetables)
• 1 scoop PBMaxPro Peanut Protein
• 1 tbsp olive oil
• Juice of ½ lemon
• Pinch of salt and black pepper

Optional toppings:
• avocado slices
• roasted chickpeas
• sesame seeds


Method

  1. Prepare the base
    Place the cooked quinoa in a bowl and add the vegetables.
  2. Make the protein dressing
    In a small bowl mix PBMaxPro protein with olive oil, lemon juice, salt and pepper. Add 1–2 tablespoons of water and stir until smooth.
  3. Assemble the bowl
    Drizzle the dressing over the quinoa and vegetables and mix gently.
  4. Add toppings
    Finish with avocado, chickpeas or sesame seeds for extra flavour and texture.

Serving ideas

This bowl works great with:

• roasted sweet potatoes
• grilled chicken or tofu
• leafy greens
• fresh herbs
